WHO AM I


I have no idea what has come over me. I am the girl who lives off meat and potatoes. But, tonight I was feeling bored and hungry, so I decided to try to re-create an appetizer that I had when we were in North Carolina- black bean hummus. I'm almost hesitant to call it hummus because it has NO chick peas, which I absolutely despise. I ended up putting it on a tortilla with sliced avocados and shredded cheese. It made for a pretty filling supper.










Black Bean Hummus

Unfortunately, I can't really give you a recipe since I just kinda threw stuff together. I am the kind of cook that looks up various recipes online and I take the easiest steps of each recipe to create my dish. Here's what I did:

1 can of black beans, drained and rinsed
About 4 teaspoons of salsa (I got my dad "Salsa of the Month" for Christmas so they had a stash of several different flavors. I just picked one)
About a tablespoon of cumin
Lime Juice

I threw everything in the food processor and blended. Not bad for my first stab at something I never thought I'd eat in my entire life.
